New Orleans Cookery with Chef Idalee
This New Orleans cooking class is a flavorful, hands-on experience that brings the heart of Louisiana cuisine to life. Rooted in Creole and Cajun traditions, this classes teach you how to prepare iconic regional dishes while sharing the rich history and cultural influences that make the city’s food so unique.
In this class, you’ll learn to make your own Cajun seasoning, shrimp étouffée, and bananas foster under the guidance of Chef Idalee DiGregorio. We will begin with an introduction to the “holy trinity” of Louisiana cooking—onions, celery, and bell peppers—along with techniques like making a proper roux, balancing bold spices, and layering deep, slow-simmered flavors.
Once our dishes are ready, we will share our freshly prepared meal together. Students will take home their own Cajun spice mix and recipes for all the dishes we prepared.
This class is interactive and suitable for adults and children over 16 years of age and for all skill levels.
